Vegan Gyros with Tzatziki

Ingredients

  • 1 package Hero Gyro style pieces
  • pitta bread
  • 1/4 cucumber, thinly sliced
  • 1 cup cherry tomatoes, halved
  • 1/4 cup sliced red onion

TZATZIKI

  • 1/3 cup vegan greek yogurt or sour cream
  • 1 cup grated, strained cucumber
  • 1 tbsp olive oil
  • 1 tbsp dried mint
  • 1/2 tbsp lemon juice
  • 1/4 tsp salt
  • a small clove of garlic, minced

Instructions

Mix all the Tzatziki ingredients together in a small bowl.

Next, cook the Hero Gyro style pieces.

While they are cooking, slice your cucumber and red onion. Half a handful of cherry tomatoes.

To assemble, spread a generous serving of hummus on each pitta bread then top with Hero Gyro style pieces, cucumbers, onions, tomatoes, olives and tzatziki. Garnish with fresh parsley to serve.

Cooking Hero

  1. Cook the meat on medium to high heat until golden brown on both sides.
  2. Press the meat for 4 sec with a spatula to remove excess humidity.
  1. Spread the meat in a baking tray evenly.
  2. Cook at 180 Celsius for 12-20 min according to your preference.

Keep refrigerated below 5°C. Once open, consume within 7 days.
Can be kept in the freezer for up to 12 months.
