Vegan Gyros with Tzatziki
Ingredients
- 1 package Hero Gyro style pieces
- pitta bread
- 1/4 cucumber, thinly sliced
- 1 cup cherry tomatoes, halved
- 1/4 cup sliced red onion
TZATZIKI
- 1/3 cup vegan greek yogurt or sour cream
- 1 cup grated, strained cucumber
- 1 tbsp olive oil
- 1 tbsp dried mint
- 1/2 tbsp lemon juice
- 1/4 tsp salt
- a small clove of garlic, minced
Instructions
Mix all the Tzatziki ingredients together in a small bowl.
Next, cook the Hero Gyro style pieces.
While they are cooking, slice your cucumber and red onion. Half a handful of cherry tomatoes.
To assemble, spread a generous serving of hummus on each pitta bread then top with Hero Gyro style pieces, cucumbers, onions, tomatoes, olives and tzatziki. Garnish with fresh parsley to serve.
Cooking Hero
- Cook the meat on medium to high heat until golden brown on both sides.
- Press the meat for 4 sec with a spatula to remove excess humidity.
- Spread the meat in a baking tray evenly.
- Cook at 180 Celsius for 12-20 min according to your preference.
Keep refrigerated below 5°C. Once open, consume within 7 days.
Can be kept in the freezer for up to 12 months.
